Vietnamese Pork Stir-Fry
- 1 1/2 tbsp cooking oil
- 1/2 onion , finely diced
- 2 tsp ginger , grated or minced
- 2 garlic cloves , minced
- 1 birds eye or Thai chili , deseeded and finely chopped (Or any other chilies of your choice)
- 500g ground pork
- 5 tbsp brown sugar
- 2 tbsp fish sauce or low-sodium soy sauce
Heat the oil in a large pan/skillet/wok over high heat.
Add the onion, ginger, garlic, and chili and cook for approx 2 minutes. (Until onion is cooked through)
Add the pork mince and cook for 2 minutes or so, breaking up the meat with a spoon.
Add the sugar and fish sauce (or soy sauce). Stir, then leave it to cook without touching until all the juices are cooked out and the pork starts caramelizing – about 2 minutes. Then stir it and leave it again. Leave without stirring for around 30 seconds at a time to get a nice capitalization on the pork and onions.
Serve over rice or noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! Additionally, you can add some fresh sides like tomato, spring onion, cucumber, and fresh chilies.
